Instructions
  1. Bring a pot of water to a boil and drop in your fave pasta.
  2. Drop the fresh basil in a food processor and give it a good spin.
  3. Half, pit and scoop the avocados into the food processor along with the lemon juice, garlic powder, s/p and let it rip until it starts to get nice and smooth.
  4. Add the olive oil and pulse it some more until you're happy with the consistency and it's proper pesto-y, dreamy, creamy.
  5. Half the tomatoes if you're going to use them.
  6. Drain the pasta when it's done and return to pot along with the avocado pesto and tomatoes if that's how you're rolling.
  7. Serve it up w/ a sprinkle or 2 of grated parmesan cheese if you want. You can also drop a leaf or 2 of fresh basil on it if you got a few hanging out left over.
Recipe Notes

I feel like red sauce is a little heavy for when the weather is nice so I like to go another way.

You can use any kind of cheese you want if you don't want to do the 1/2 sawdust grated parmesan that's fine.  I like sawdust, it's what turns boys into men. I bet Ron Swanson eats sawdust and his mustache is better than yours.  Oh, you don't have a mustache or what one you say, eat some sawdust and man up Nancy boy.

Also, salt the water for the pasta if you want. I don't because I'm a rebel and I like to live on the edge.  It's anarchy but I play by my own set of rules.
